EASY PASTA SALAD

 

This simple yet delicious salad is a perfect make-ahead side dish for any BBQ or get together

INGREDIENTS


Dressing


1/3 cup freshly squeezed lemon

​

1 tbsp lemon zest

​

2 garlic cloves, finely chopped

​

2 tbsp parsley, finely chopped

​

1/2 cup extra virgin olive oil

​

salt & pepper to taste

​

​

Salad

​

4 cups uncooked rotini pasta or gluten-free rotini

​

1 1/2 cup pitted kalamata olives, sliced

​

2 cups cherry tomatoes, sliced

​

1 large cucumber, sliced 

​

1/2 cup feta cheese, crumbled

​

DIRECTIONS


1.

Bring large pot of salted water to boil.

​

2.

Cook pasta until al dente.

​

3.

Drain pasta and rinse in cool water.

​

4.

In salad dressing jar, shake all dressing ingredients. 

​

5.

In large salad bowl, mix together pasta, cherry tomatoes, cucumber, olives and feta.

6.

Add 1/4 dressing to salad and toss.

​

7.

Slowly add more dressing until desired amount is achieved.

​

8.

Store any remaining dressing in fridge for up to one week.

​

9.

Season with salt & pepper and serve.

​
