ROASTED SWEET POTATO & KALE SALAD WITH GINGER DRESSING

 

Perfect for any season,

this smokey sweet potato & kale salad can be served as a side dish,

or as a comforting main meal

INGREDIENTS


Dressing

​

1 1/2 tbsp toasted sesame oil

​

1 small shallot, diced

​

1 tbsp fresh ginger, finely chopped

​

1 garlic clove, minced

​

3 tbsp apple cider vinegar

​

1 tbsp honey

​

2 tsp soy sauce

​

1/2 cup extra virgin olive oil

​

​

Salad


​

2 to 3 medium sweet potatoes, peeled and cubed into 1 inch pieces

​

1/2 tsp smoked paprika

​

1/2 tsp garlic powder

​

1/4 tsp chipotle chili powder

​

1 bunch of kale, stems removed and chopped (about 6-8 cups)

​

1 avocado

​

1/4 cup italian parsley 

​

salt & pepper to taste

​

​

DIRECTIONS


1.

Preheat oven to 425 degrees f.

​

2.

Place chopped sweet potatoes on baking sheet and toss with olive oil.

​

3.

In small bowl, mix paprika, garlic powder, chili powder, salt & pepper.

​

4.

Sprinkle mixture over sweet potatoes and toss well, making sure to coat potatoes.

​

5.

Roast sweet potatoes in oven for 25-30 min, unter tender when poked with fork.

​

6.

While sweet potatoes are cooking,

​

heat sesame oil in saucepan over low-medium heat.

​

7.

Add shallots, salt & pepper and cook for 2-3 minutes.

​

8.

Add ginger and garlic, and cook for 2-3 more minutes.

​

9.

Reduce heat and add vinegar, honey and soy sauce.

​

10.

Slowly whisk in olive oil.

​

11.

Place kale in salad bowl.

​

12.

Drizzle 1 to 2 tbsp of dressing and massage kale with hands.

​

Kale should be soft and tender.

​

13.

Add roasted sweet potatoes and drizzle with more dressing.

​

14.

Top with parsley sprigs and avocado (sliced, chopped of halved).

​
